5 minute Salted Caramel Cake in a Mug

Ingredients: {makes 1 mug cake}
4 tablespoons all purpose flour
4 tablespoons sugar (or 5 tablespoons Splenda)
3 tablespoons unsweetened cocoa powder 1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg
3 tablespoons skim milk (rice, soy, or almond milk)
1 tablespoon vegetable oil
2 salted caramels (or regular caramels encrusted with sea salt on one side)

1. In a medium/large mug, mix the following: flour, sugar, cocoa, baking powder, salt.

2. In another mug (or small bowl), mix the egg, milk, and vegetable oil until blended.

3. Pour liquid mixture into the dry mix and blend with well with a fork until smooth. Drop caramels into center of mixture one at a time.

4. Place mug in microwave and nuke on high for one minute and 30 seconds. If needed {if cake batter is still gooey}, microwave on high in 15 second increments until cake is firm. If you stick a clean spoon or fork in the middle, it should come out clean (not counting the melted caramel).

5. Top with a scoop of ice cream, whip cream, or even a bit of strawberry jam.
